ORGANIC & BIODYNAMIC VITICULTURE

Based on careful observation and the management of the factors which influence our terroir and its habitat.

We do not apply chemical herbicides or pesticides, but instead we use natural resources, with the primary aim of maintaining a balance in the environment, and we preserve spontaneous ground cover in order to obtain spongy soils. Through biodynamics, which goes one step beyond organic growing, we breathe life into our vineyards and seek to raise levels of biodiversity: we apply plantbased infusions and decoctions to avoid pest infestations, and we make our own animal and vegetal compost and the preparations of our own farm.

PRODUCTION

Harvested by hand and selected on a sorting table. The grapes are cooled. Pressing of the whole grapes. We only use the free run juice. Temperature-controlled fermentation. This wine is fermented and aged on its lees, part in concrete, ovoid-shaped tanks and the rest in cement amphoras.

TASTING NOTES

APPEARANCE

Golden with greenish glints.

NOSE

Intense with good definition. Aromas of ripe pears and stone fruits (apricot, loquats), citrus notes (lemon jam, citronella, lime peel).

PALATE

Pleasant on entry, medium-bodied, unctuous. The grapefruit aromas, with their characteristic bitter notes, come through again via retro-olfaction and add to the pronounced acidity, giving the wine an intense finish.

FOOD PAIRINGS

White and oily fish. Seafood, particularly oysters. Appetisers, cured meats and pasta dishes. Rice dishes such ‘paella’ and ‘risotto’.
